If you are new to making your own fermented foods, you will find pH test strips to be useful for checking the acidity of your ferments. pH can be used as an indicator of the development of lactic acid bacteria - the acidic environment created doesn't support the growth of pathogenic bacteria and allows our ferment to be preserved.
The pH test strips measure from a pH of 4 to 7 in increments of 0.4. Simply dip/soak the test strip in the food product of interest for about half a second then match both colours to the code on the pack to determine the pH of your product.
