Are all glass jars the same?
No, not all glass jars are the same, and it’s important to choose the right type for your intended use. Jars vary in quality, composition, strength, and purpose. Some are designed only for dry storage, while others can withstand the heat and/or pressure involved in preserving, canning, or fermenting. There are also differences in the closures, such as lid style and whether they provide an airtight seal.

Can I pour boiling water in glass jars?
Not all glass jars are designed to handle boiling water. Pouring boiling liquid into a cold or low-quality storage jar can cause the glass to crack or shatter due to thermal shock. This is especially true for jars not intended for preserving, such as lightweight or decorative glass.
If you're using proper preserving jars from trusted brands like Ball, Kilner, Le Parfait, or Weck they are made to handle high temperatures - but even these should be pre-warmed before adding boiling water. To minimise the risk, always warm your jars first and pour the water slowly.

Do glass jars break in boiling water?
Glass jars can break in boiling water if there's a sudden change in temperature. For water bath canning, jars must be hot before being placed into boiling water to avoid thermal shock. A general rule is to avoid more than a 50°C temperature difference between the jar and the water. Always heat your jars before canning - either by keeping them in hot water, a warm oven (~100-120°C), or using a jar steriliser - and never place a cold glass jar into a boiling canner.

What is the difference between a Mason jar and a glass jar?
A Mason jar is a specific type of glass jar designed for preserving and canning. It’s characterised by its two-piece lid system - a flat metal lid and a separate screw band - which allows for a secure vacuum seal to form during the canning process. While all Mason jars are glass jars, not all glass jars are suitable for preserving. Many glass jars are intended only for storage and don’t have the strength or lid design needed for safe home canning.
