Are clip top jars good for preserving?
Clip top jars are excellent for preserving - they don't have metal lids, which means no corrosion over time.
Clip top jars perform best using the water bath and pressure canning methods - we do not recommend them for the traditional hot fill and overflow methods.
For preserving, make sure you choose jars that are suitable for canning and have a natural rubber seal - the natural rubber seal is needed for easy opening later. Le Parfait Super and Super Terrine jars are ideal.

How to sterilise clip top jars?
Remove the rubber seals, wash the jars in warm, soapy water, and rinse well. Then either place them in an oven at ~120°C for 15 min or place in a pot of water, bring to the boil and simmer for 10 min. Note, if you're using the jars in a water bath or pressure canner, sterilising beforehand is not necessary.

Can you ferment in a clip top jar?
Yes, clip top jars are ideal for fermentation. High quality jars like Le Parfait Super and Super Terrine will self-vent as pressure builds up in the jar. They're some of the best performers for fermentation - airtight but able to release pressure when needed.
