What do you use a Mason jar for?

Mason jars are commonly used for preserving and canning food. In New Zealand, they’re especially popular for hot fill and overflow methods, as well as water bath and pressure canning. You can also use them for everyday food storage or fermentation, just swap the lid for a silicone airlock when fermenting.

What is the difference between Mason jars and ball jars?

Ball is the original mason jar brand, but today “mason jar” often refers to any jar with a two-piece preserving lid. Kilner and Le Parfait jars are common alternatives. Kilner jars are very similar in design to Ball jars. Le Parfait Familia Wiss Terrine jars are a French-style version - they use a flat metal seal and a full screw lid instead of a separate screw band, but work in a similar way. Both are very reliable mason jar options.

Why are Mason jar lids two pieces?

The two-piece lid system (a flat metal seal and a screw band) makes it easier to check if your jar has sealed after processing. Once cooled, you remove the screw band and gently check the seal. This setup offers a safer and more reliable seal than standard one-piece lids, especially when preserving food at home.

How to seal a Mason jar?

Mason jars seal as the hot contents cool, creating a vacuum that pulls the flat lid down tight. This happens naturally during hot fill, overflow, water bath, or pressure canning methods - no extra steps required beyond following proper preserving techniques.

Are Mason jar lids reusable?

Flat metal lids should only be used once for preserving to ensure a safe seal. However, screw bands can be reused many times - just remove, wash, and dry thoroughly between uses.
