How to sterilize and seal jam jars?

The two most common methods for sterilising empty jam jars are:

  • Place clean jars in an oven at ~120°C for 15 minutes, or
  • Submerge in a pot of water, bring to the boil, and simmer for 10 minutes

If you are using water bath or pressure canning methods, you do no need to pre-sterilise the jars, as the canning process itself will sterilise them.

Regardless of whether you use the hot fill, water bath, or pressure canning method, the jar seals as the hot contents cool and create a vacuum.

How to tell if a jam jar is sealed?

It depends on the jar type:

  • One-piece twist metal lids: The centre of the lid dips down when sealed.
  • Two-piece mason jar lids: Once cooled, remove the screw band and gently check if the flat metal lid is fixed in place (it will also dip slightly in the middle).
  • Clip-top jars (e.g. Weck or Le Parfait Super): Simply unclip and check that the lid stays sealed.

Do you need to boil jam jars to seal?

No, you don’t. You can use the traditional hot fill method - pour boiling hot contents into a hot, sterilised jar and screw on a hot, sterilised lid tightly.

How long does homemade jam last?
