The Brod & Taylor Baking Shell – Batard creates a steam-rich environment around your bread to help it rise well and develop a crisp crust, without the weight and preheating required by a traditional cast iron bread oven.
Made from lightweight aluminium, the shell transfers heat quickly while trapping steam released by the dough. Place your shaped boule on a suitable flat baking surface, position the shell over it and remove the shell partway through baking to finish browning the crust.
The lightweight design is easier to lift and handle around a hot oven than heavy cast iron cookware. When it is not being used for baking, the shell can also cover a loaf on the bench or cutting board.
Its elongated shape is designed for batards and other long loaves.
